NY State Fair Food 2015: Inside the Memphis Pulled Pork Sammich
The New York State Fair is famous for its over-the-top, gut-busting food. Then there are those treats that are, perhaps, a little less so. For the 2015 fair, we’re bringing you an inside look — an autopsy of sorts — for some of its most famous (and infamous) offerings. We’ve enlisted the advice of an expert — Syracuse University registered dietitian and instructor Jane Burrell Uzcategui. Whatever you eat at the Fair, she advises, use caution. “With the Fair comes more creative fried creations,” Uzcategui says. “These foods are tasty, attention grabbers that should set off the nutrition alarms — but eating them occasionally won’t kill you.” This selection is … MEMPHIS PULLED PORK SAMMICH What it is: Slow-smoked pork shoulder, “pulled” or shredded into small pieces, piled high and thick on a bun and slathered in Dinosaur barbecue sauce. The vendor: Dinosaur Bar-B-Que, in a giant stand shared with Gianelli Sausage. This is one of the iconic State Fair stops, probably the largest food vendor at the fair (certainly luring some of the biggest crowds). The pork sandwich is based on a signature item at the original Dino restaurant in Syracuse. Location: At the southwest corner of Chevy Court, near the pavilion facing the stage (and across from the Dairy Products Building). There are beautiful summer and fall fruits and vegetables waiting to be devoured. • Don’t skip meals before going to the Fair. This leads to overcompensating when you get there.
